Yahir's Story
Yahir Mieses didn't just choose the coffee industry; he inherited its legacy. Hailing from a coffee-producing family in Tsachopen—a vibrant community of Yanesha descendants in the high-altitude region of Oxapampa, Pasco—his understanding of the bean begins deep in the soil.
"Drinking coffee was a vital part of our family culture every single morning," Yahir reflects. "My love for it was born from watching the grueling work of my great-uncle, Nicanor García, and my aunt, Judith Soto, who produce organic coffee. During the harvest season, they cared for every single step of the process with painstaking detail. That's where I learned that we must extend that same rigorous care through the milling, the sorting, the roasting, and the final brewing."
Teaching Technology and Technique
It's no surprise then, that after entering the specialty coffee sector professionally in 2014, Yahir pursued mastery across every link of the value chain to become a triple-threat: an expert Barista, Roaster, and Cupper. Today, he channels that vast experience into his role as a Trainer and After-Sales Specialist at Saba Equipamiento, Aillio’s trusted distributor in Peru.
Acting as a direct bridge between technology and technique, his daily work revolves around empowering local coffee professionals. He doesn't just install equipment; he trains roasters, troubleshoots profiles, and ensures that the local community has the technical support they need to succeed.
Bridging Generations at Origin
But his most meaningful work happens when he brings that cutting-edge technology back to his roots. Introducing modern processing innovations and precise data tracking to a traditional, multi-generational family farm wasn't an overnight task, but the results spoke for themselves.
"Bringing current, data-driven information to my family was not easy at first," Yahir admits. "But they quickly understood that thanks to innovative processing, we will see incredible improvements in the cup. They absolutely love their coffee—they even talk to the plants! There is a deeply powerful, spiritual connection there. When they finally saw their own coffee being roasted on the Aillio Bullet, they were so incredibly moved. They couldn't stop looking at each other, completely eager to taste it."
Elevating the Domestic Market
Beyond his technical role, Yahir remains a fierce advocate for his country's coffee culture, traveling to national events to promote the domestic consumption of specialty coffee within Peru. For decades, the finest Latin American coffees were exported, leaving producing countries with lower-quality reserves. Yahir is actively fighting to flip that dynamic.
He firmly believes that Peruvian coffee has the potential to be the absolute best in the world. For Yahir, true success means ensuring that Peruvians themselves are the ones proudly roasting, brewing, and drinking the very best of their homeland's harvest.
