Morten's Story
Morten Münchow is the founder of CoffeeMind, a Danish coffee education and research company dedicated to making coffee knowledge more evidence-based, accessible, and useful for both professionals and enthusiasts.
With a background spanning sensory science, coffee roasting, brewing, statistics, and education, Morten has spent more than two decades developing courses, conducting research, and teaching coffee professionals around the world. His work focuses on separating documented knowledge from industry myths by applying scientific methodology, sensory science, and data analysis to coffee roasting and quality evaluation.
The Epiphany Cup
Long before he was a leading researcher, Morten's trajectory was altered by a single sensory awakening. In 2002, he brewed himself an excellent cup of coffee in a moka pot. As he enjoyed his coffee, his mind wandered to the succession of flavors cascading across his tastebuds. He realized then that he understood it, and was confident he could use his background in science to explain to others what was happening, chemically, to create those flavors.
He leaned into his background in chromatography to do just that, presenting his findings to a group of "laymen" as part of his university course requirements.
What followed was a meticulous, dedicated, decades-long effort into using science to get to the bottom of what makes a great cup of coffee taste so great.
Evidence Over Myth
Rather than viewing roasting as a collection of tricks or favourite profiles, Morten's philosophy is that better coffee comes from understanding the relationships between raw materials, roasting, brewing, sensory perception, and consumer preferences. His goal is to help coffee professionals and home roasters make decisions based on evidence, curiosity, and critical thinking.
Bridging Science and Software
The Aillio Bullet has become an important part of CoffeeMind's teaching and research because it combines precise process control with excellent repeatability, making it well suited for controlled roasting experiments. It is regularly used in CoffeeMind's courses, educational content, and research projects, including work on roast modelling, process simulation, machine learning, and the development of digital tools for coffee education.
Mastering the Bullet
Among CoffeeMind's educational programs is Master Your Bullet the CoffeeMind Way, a comprehensive online course built around a scientific understanding of roasting rather than recipes or fixed profiles. The course teaches Bullet users how roast parameters influence coffee quality, enabling them to understand, predict, and control roast outcomes through experimentation and evidence-based decision making.
