Mario's Story

For Mario Idrovo—widely known across the industry as "Barista Mario"—coffee has never been just a beverage; it is a global language, a rigorous science, and a launchpad for entrepreneurs.

Proudly rooted in Ecuador, Mario has spent his career taking Latin American specialty coffee to the global stage, and bringing global standards back home.

Mario’s journey is defined by an uncompromising pursuit of excellence. He first made his mark as the Ecuadorian Barista Champion, carrying the flag for his country at the prestigious World Barista Championships.

Mastering Every Variable

Stepping off the competition stage wasn't the end of his education; it was simply a new beginning. Seeking to master every single variable of the craft, he traveled to Italy to earn a Master’s Degree in Coffee. Today, he holds the industry's most rigorous credentials: he is an SCA Authorized Trainer (AST) and a certified Q Grader, meaning his expertise spans from farm-level agronomy to elite, high-pressure competition preparation.

Stepping Up to the Mic

Mario’s true legacy isn't in the trophies he has won—it is in the businesses he has helped build. As the founder of CAFERING and the Mario Idrovo Coffee Institute (MICI), he has trained and certified hundreds of professional baristas worldwide.

Mario is also a media man. Through his platforms—including Barista Mario TV, the MI Coffee Gazette, and his highly engaged social channels—he bridges the gap between elite coffee knowledge and real-world application.

He realized early on that to truly elevate specialty coffee culture in LATAM and the USA, education had to go beyond extraction and latte art; it had to include roasting, business strategy, and brand building. He teaches aspiring coffee professionals how to build their own independent coffee brands from the ground up.

The Modern Roast Lab

For Mario, technology in the classroom is non-negotiable. By integrating Aillio roasters into his SCA-certified curriculum and his business-building courses, he is giving his students hands-on access to the future of roasting.

He believes that the Bullet is the perfect tool his students need to launch their micro-roasteries and take control of their own supply chains, enabling a new generation of coffee professionals to build something new, all by themselves.
