Leonardo's Story

For Leonardo Candia, coffee is where technology, precision, and a passion for detail intersect. Coming from a rigorous background in physics, engineering, and high-tech commercial refrigeration, Leo didn't fall into the coffee industry by accident. Instead, he saw a world where applied engineering directly impacts the sensory experience of the final cup.

Driving Argentina's Coffee Technology

Today, to talk about coffee technology in Argentina is to talk about Leo. With over 11 years dedicated to technical support, service network development, and training for professional coffee equipment, he has become one of the most recognized professionals in the region. He holds the distinct honor of being the only certified AST (Authorized SCA Trainer) for the Coffee Technicians Program in Argentina, and one of only five in the entire continent.

Demystifying the Machine

But Leo’s true superpower lies in his empathy and his ability to demystify machinery. He excels at translating complex technical data into practical, accessible knowledge for the baristas and roasters working on the front lines every day.

Whether he is training technicians, collaborating with café owners, or judging at national competitions, his motivation remains the same: helping people understand exactly what happens inside the equipment. As he puts it, "Just as we seek to raise the bar for specialty coffee, we must also elevate the people who support it."

Solving Real-World Logistics

This deep, education-first vision makes him a key figure for the development of specialty coffee in the Southern Cone—a vast region where long distances and logistical hurdles are everyday challenges. This is exactly where the Aillio Bullet comes into play. For Leo, the Bullet's induction technology, total thermal efficiency, and intuitive software ecosystem aren't just features to tick off a list, they are solutions to real problems.

Leo’s mission is clear: to use his technical expertise to help roasters make more conscious, data-driven decisions during the roast. He aims to bring these tools and knowledge to every corner of Argentina, ensuring that any city or region, no matter how small or remote, has the potential to become a thriving new hub for roasting, community, and coffee evolution.
