Eduardo Choza is the 2024 U.S. Roasting Champion – a impressive title that still falls short of capturing what Eduardo brings to the world of coffee.

That's because Eduardo is not just a world-class roaster—he’s also a connector, a teacher, and someone who deeply understands the potential within the roasting communities across LATAM and North America.

The Spark of Connection

Like many before him, Eduardo’s journey into coffee began with a single, unexpected moment: tasting a natural-process Ethiopian coffee that would change the course of his life. Since then, his path has taken him through competition stages, countless hours in front of roasting machines, and deep into the heart of coffee-producing communities. But what defines Eduardo isn’t just his titles or trophies—it’s his respect for the process and people that make coffee possible.

"I’ve lived many defining moments in this world of coffee," Eduardo shared, "but nothing has shaped me more than the human connection. I love being on coffee farms, sharing space with the people who make my career possible."

Honesty in the Drum

Eduardo’s approach to roasting reflects that same grounded clarity. He doesn’t overthink the roast—he trusts his experience, intuition, and lets the coffee speak. His style isn’t about pushing a single flavor note; it’s about balance, harmony, and honesty in the cup.

"Before I ever won anything in the U.S., it was people in Latin America who believed in me—even before I believed in myself," he said. "Partnering with Aillio is a way to give back, to connect and grow with this amazing community."

When he's not competing, Eduardo hosts his own "Foos in Coffee" Apple podcast, and works with A Toda Madre Roasters and LA FINCA COFFEE in Maryland.
